PUMPKIN SPICE OATMEAL RECIPE! Is it Buddy Approved?

It's officially Fall; The commencement of SPOOKY SEASON!


In honor of celebrating the Fall Season, here's my ALL TIME favorite Oatmeal recipe to get you into the fall spirit!

No-Filter, Basic White Girl, Pumpkin Spice Oatmeal!

I love to start my morning off right. Especially a yummy one! As the seasons start to change, so does our food, tastes, activities and energy. I'm sure you know the saying, "Eat Local", but have you ever heard "Eat Seasonal"? Seasonal eating is very unique because without knowing it, our body tends to crave the foods that are harvested in that season!


For example, we tend to crave more towards the more heartier, warming and grounding foods such as squash, nuts, onions, sweet potatoes and PUMPKIN in the fall, than we do with other seasons which may have a lighter or heavier pallet. Check out my Blog Post about Seasonal Eating (Coming soon)!


  • OATMEAL, being full of fiber, nutrients + minerals and provides you with a burst of energy, it's also very hearty and grounding, making it a perfect fall seasonal pairing, especially with pumpkin. Oatmeal great for heart health, healing the gut, helps in digestion and is a blood sugar stabilizer.

  • CINNAMON, great for balancing blood sugar and the scent itself boosts memory. Cinnamon alone is anti-fungal, antibacterial, antiviral and anti-inflammatory.

  • COCONUT MILK, plant-based source of saturated fat that promotes brain development and immune support, helps control weight, has cholesterol-lowering properties and is antibacterial and anti-fungal.

  • PECANS, a great source of healthy fats, prevents cancer, builds immunity, great for your heart and aids with weight loss.

Since it's October, we get an explosion of "Pumpkin Spice and Everything Nice" on virtually everything! I found it only appropriate to share my all time favorite Pumpkin Spice recipe...in oatmeal. It's delicious, filling, provides me with energy for the day and MOST importantly, a lot of health benefits! Big Plus! PUMPKIN SPICE OATMEAL

Topped with Healthy AF "candied" Pecans!


WHAT YOU NEED...

INSTRUCTIONS...

**Use the measurements of OATS, WATER, and SALT that is on your oatmeal package. However, swap out the water for the CANNED COCONUT or FAV VEGAN MILK.**


STEP 1

Bring CANNED COCONUT MILK, PUMPKIN PURÈE, MAPLE SYRUP, VANILLA EXTRACT, PUMPKIN PIE SPICE, CINNAMON and SALT all to a boil.


STEP 2

Once to boil, slowly stir in your oats!


By this time, your whole kitchen should smell like Pumpkin Spice and EVERYTHING Nice, you're welcome! :)


STEP 3

Cook according the package (Mine calls for 8 minutes)


STEP 4

Meanwhile, in a separate sauce pan, begin to candy your pecans!


Candy your PECANS in COCONUT OIL and PUMPKIN PIE SPICE. You may add COCONUT SUGAR or organic raw cane sugar to sweeten the pecans if desired, but I love them without it too!

(Be sure to do this on low heat to not burn your nuts!)


STEP 5

Back to the oatmeal! Once your oats are cooked completely and are at the consistency you like, SERVE IT UP BABY!


STEP 6

Plate up, garnish with your healthy AF candied pecans, sprinkle some chia seeds (optional), add a bit more of CINNAMON and PUMPKIN PIE SPICE and take a picture of your masterpiece! Dive in and enjoy!


VOILÀ! BON APPÈTIT! ENJOY!
